Nourishing Protein Bars - A great whole foods snack

Ingredients
* 2 cups almonds
* 1/4 cup pumpkin seeds
* 1/2 cup dates
* 1/2 cup unsweetened dried shredded coconut
* 1/2 cup almond butter
* 1/2 teaspoon sea salt
* 1/2 cup coconut oil
* 1 tablespoon maple syrup
* 2 teaspoons vanilla extract

Directions
1. Grind almonds through almond butter in food processor.

2. Melt coconut oil, add maple syrup and vanilla. Add to food processor.

3. Pulse to coarse paste.

4. Spread in 8x8 pan.

5. Cool in fridge.
